Pineapple:
1 cup diced fresh pineapple
¼ cup diced red onion
½ jalapeno, diced
Juice and zest of lime
½ cup cilantro
1 clove minced garlic
¼ teaspoon sea salt
In a medium bowl, combine the pineapple, red onion, jalapeño, lime juice and zest, cilantro, garlic, and sea salt. Season to taste and chill until ready to use.
Mango:
1 medium ripe mango, peeled, pitted, and diced
¼ cup diced red onion
¼ cup finely chopped cilantro
Juice and zest of 1 lime
1 small garlic clove, grated
½ jalapeño, minced
¼ teaspoon sea salt
In a medium bowl, mix together the mango, onion, cilantro, lime juice, garlic, jalapeño, and salt. Chill until ready to use.
Original:
2 tomatoes, diced
1 clove of garlic, minced
¼ cup diced red onion
¼ cup chopped green onions
juice & zest of 2 small limes
1-2 teaspoons chili paste
½ teaspoon olive oil
salt & pepper
½ teaspoon ginger, minced (optional)
Mix all ingredients together. Let it sit for at least 15 minutes for the flavors to come together. Taste and adjust seasonings.
