Crust:
300 g shortbread (or Oreo cookies)
100 g butter, softened
Filling:
1 cup peanut butter
1 pack of cream cheese, softened
1 cup fine sugar
1 cup heavy or whipping cream
Preheat the oven to 180 degrees C.
Crush the cookies until they’re fine crumbs. Pour the melted butter over and stir with a fork to combine. Press into a tart pan and bake until set, 5-7 mins. Remove it and let it cool down.
Beat the peanut butter with the cream cheese, sugar and cream until smooth.
Pour the filling into the crust, levelling the surface with a spoon. Chill for at least an hour or two before serving.
